Apple Pie

There is just something super American about Apple Pie. It’s even in the first American published cookbook, a 1796 book called “American Cookery”, written by Amelia Simmon. We have been making apple pies far for a long time in America.

I felt as an being an American and proud, that I had to conquer this American tradition, or else I couldn’t call myself an Bakaholic. I had a hard time getting over just making cobblers. Crumbling the butter and flour was not easy for me to learn. Then I had to have a pie crust learning experience. My family could surely tell you about my fair share of failed pies. I took a while to learn but now after months of learning my way, I can make a perfect apple pie. I feel so American. =)

An apple pie consists of only 2 things. The crust and the filling. I have read a lot of different apple pie recipes, and although I love being healthy most of the time, I indulge in a very unhealthy recipe for my favorite butter-full American apple pie.

Anyways, I fell in love with this guilty pleasure master recipe for it.

I know it may be bad but I looked to a butter company’s blog. How could I not go wrong if you don’t skimp on the butter; and you know them butter company blogs don’t skimp on that. So Land O’ Lakes ‘s recipe won. I have made this over and over and over and over, and over. And I have even made it in mini cupcake size versions. I have substituted the butter sometimes for half of what is called for and used organic shortening instead but it doesn’t end up as flaky. Really, Butter is better if you want a flaky crust and a juicy filling.

Now go on and have some American Fun! Make yourself some homemade whipped cream to go with it by adding heavy cream and some powdered sugar together. Mix it up with an electric mixer and you have some homemade whipped cream. Enjoy making some American apple pie. Really it may seem hard, but sometimes I think the hardest part is just chopping the apples.

I just love hiding things like beans, veggies and even special flavors into my cooking. Even if not all of these things may be sweet, they are nutritious and good to eat, so why not add them to your dessert.

It tastes incredible steamed with carrots and mashed into baking as you would applesauce.

  • Berries fruit and or natural flavors: blackberries and rosehips shown below both provide a naturally sweet taste to baking, and are great to find locally if you have some. Bake berries into baked goods folding in after mixing your dry and wet together. For rosehips dry powder use in the dry mix, for natural flavors such as lemon or vanilla use in the wet mix.

  • I recently made a rosehip and hibiscus flavored lemon meringue pie and it was really different and tasted extra fruity from the extra flavor, and even added some color. For berries and natural flavors do note that the color and taste of your baked goods will significantly change, the more you add.

Rhubarb and cranberries-

Rhubarb and cranberries are both naturally very sour, so you will have to cook them. cranberries are excellent in baking, but do remember to sweeten them up. Rhubarb is excellent to bake with check out my favorite step by step recipe for rhubarb cobbler here.

Pie Crust 101
Pie crust is as easy as 1,2,3!
I have figured out how to make pie crusts, apple pie, whole wheat blueberry pie, even chicken pot pie biscuit crust, I have a few pointers for those out there that are learning how to make pie crusts, and a few pictures that I hope can help with the learning process.

Step 1: measure your flour, sift it into a bowl add your dry ingredients as needed for recipes, more salt for biscuit crust and a small dash for regular pie, and baking powder for biscuit crust. you can use any kind of flour , whole wheat, or even gluten free.1795335_618587711586751_4775536311822800335_o

Step 2: cut in desired amount of butter, the more pastry the crust the more butter you use. For lemon meringue pie you use more butter. Using a pastry cutter or 2 butter knives, cut the butter into the flour until you create crumbs that look like small peas. if you are vegan you can use coconut butter for this step..10532334_586658934779629_6181112585823331983_o
Step 3: once your butter and flour are crumbled, slowly work in 2-3 tbs of water until you create a dough, do not over-knead, place ½ the dough on cutting board, and or parchment paper and with a small amount of flour dusted on, roll out to desired length, this half would be the bottom, place it in your buttered pie pan, fill your pie and do the same for the top half.

or cut shapes into the top like this.

For chicken pot pie crust, brush egg whites over the top of it before you bake and its like “tanning lotion” for pie crusts. Your chicken pot pie will have a harder crust on top with a egg wash.10549270_671832662928922_5318494369214607536_o
